Só or Apúa or meatball soup is a classic of Paraguayan cuisine and also of the world.
This dish combines delicious meatballs with a vegetable broth and spices.
Ingredients
- 1 Kilo of beef INTERTRÓPICO
- 300g corn flour
- 4 tablespoons of oil
- 2 Onions
- ! Teaspoon of parsley
- ! Teaspoon of chopped green onions
INGREDIENTS FOR THE BROTH
- 1 Locote
- 3 Perita tomatoes
- Onions
- 1 Carrot
- 1 teaspoon chopped chives
- 4 tablespoons of oil
- Salt and oregano to taste
Steps
STEP 1
Process or grind the meat and vegetables together, using a mortar and pestle in the field.
STEP 2
Mix the meat with corn flour, oil, salt, onion and chopped parsley in a bowl.
STEP 3
Knead the ingredients until they are integrated and form small meatballs, set aside.
STEP 4
Heat oil in a pan and add the vegetables to fry for a few minutes, add salt to taste.
STEP 5
Pour 2 liters of hot water and pumpkin in the pot and cook for 10 minutes.
STEP 6
Add the meatballs one by one and cook for 20 minutes, turn off the heat and add chopped parsley.
Tips
Meat bone, other vegetables or rice can be added to the broth for more flavor.
