This version of Salvador is unique in its region; it is a bun made with ripe plantain and filled with refried beans or “poleada”; a sweet mixture of cornstarch and milk with the thickness of an atol.
Ingredients
- 2 Ripe bananas
- One box of cornstarch
- 2 cups of milk
- 4 Cinnamon sticks
- Fried Beans
- 4 tablespoons sugar
- Oil
- Fat Pepper
- Cloves
Steps
STEP 1
In a pot with water boil the plantains together with the cinnamon, coarse pepper and cloves.
Once they are cooked, mash them and set aside.
STEP 2
Separately, bring the milk to a boil and add the INTERTRÓPICO Corn Starch mixture and sweeten with two tablespoons of sugar, cook for 3 minutes.
STEP 3
Remove from heat because it should not be hot.
STEP 4
Take a portion of the plantain dough and shape it into a tortilla.
Place in the center of the poleada or fried beans, closing the dough very well is important.
STEP 5
Fry for a few minutes until golden brown.
Remove excess fat with paper towels and sprinkle with sugar.
Tips
To ripen the bananas you should store them in a paper bag or wrap them in newspaper.
