One of the most important dishes of Peruvian gastronomy that you can’t resist is the Papa a la huancaína. Recognized for its special spicy flavor, it is one of the most consumed to delight the palate of all Peruvians.
Ingredients
- 12 Yellow (or white) potatoes
- 300g of fresh cheese INTERTRÓPICO
- 1 cup of evaporated milk INTERTRÓPICO
- 3 Green peppers
- 2 tablespoons of oil
- 2 hard boiled eggs in halves
- 6 Botija olives
- 2 tablespoons chopped parsley
- Salt and pepper to taste
Steps
STEP 1
Boil the potatoes and eggs in salted water for about 10 minutes, check that they are cooked.
STEP 2
Blend the cheese, chili peppers, milk, salt, oil and pepper (if the sauce is too thick add more milk).
STEP 3
Drain the potatoes and eggs, set aside.
STEP 4
Then cover the potatoes with the sauce and garnish with olives, hard-boiled egg and parsley.
Tips
You can use small potatoes and serve as a snack.
